By definition, purebred dogs breed true. That is, if you mate two schnauzers, you'll get a litter of schnauzers, which have the essential characteristics of their parents.
If you mate a schnauzer and a poodle, the pups may be more like one parent or the other -- there's no telling which characteristics will be dominant. Schnoodles, cockerdoodles, and all these other similar mixed breed dogs are not recognised by any organisations and should not properly be referred to as a 'breed'. ;-)
